Seb's Bistro: Not Just Any Seb!

It is Chef Sebastian Reuiller of Sebastian's Bistrot at Greenwood's fame. The moment we learnt of Chef Reuiller's newest move, I wanted to fly there.  The moment I tasted the duck confit, I wanted to share with everyone.

Duck Confit with Mesclun Salad and Mashed Potato, $26



Almost everything about the duck confit is properly done.  The meat was not gamey at all. It was very tender and literally fell off the bone. Even that bit of tendon at the end of the drumstick was delightfully tender and very yummy. The skin was lightly crisp and light. The fat was ahem...fatty but not oily.  However, the duck was on saltish side, a problem I have with Sebastian's in the past too.  At least the problem is consistent and I am kinda expecting it.  I ate the confit and salad together.  The vinegar from the salad somehow cancel out the high sodium content in the duck.


When I ate something I like I remember it for life.  I love love love Chef's Reuiller mash potato for its strong presence of good butter and distinctive taste of rosemary. We were glad that Seb's sells sides for around $7.  Next time, I am going to order a double portion of the mash.

I am so in love with this rainy January. Wish Singapore's weather can be like this everyday for there was no sight of air-conditioned indoor dining area at Seb's Bistro.
