Chicken Liver Mousse and Rosette (Background)
All thanks to a rather unexpected email lecturing me on THE protocol of French dining I am reminded of Cocotte - a casual French eatery that dishes up rustic fare. We can eat, laugh, share, enjoy ourselves at Cocotte and no one will chill me for wearing slippers and skimpy stuff. So off to Cocotte after a year-long haitus.
Bread Basket
I like any bread rolls so long they are warm, crisp on the outside and soft inside. Bread with Elle and Vire butter equals one happy girl all ready to forgive the uninvited email. Anyway, the bread rolls went very well with our starters. Chicken liver mousse was ultra smooth and easy on the palate.
Roast Pork Collar in Dijon Mustard Sauce
It is really time for me to learn not to make declarations. Not long after I declared any non-kurobuta pork as yucky I found love in this roast pork collar. I never deny any creamy, buttery, garlicky and crunchy mix of flavours. Love Cocotte for whipping up this piece of heaven on earth. This is the type of food when once I ate it I will get my beloved ones to go and eat over the next few weeks. Again and again.
Very tender!
Pan Seared Chilean Seabass
So far, this is the most worthy contender to Ember's. In fact, I half suspect they are already on par in my heart. I like Cocotte's creation not just for the oily fish but the roasted fennel and the out-of-this-world zucchini gratin. I do wish for Chef Anthony Yeoh to go easier on salt. Then...perhaps it will overtake my love for Ember's sea bass. Hmmmmm.
Basque Cake
The traditional basque cake is probably the best amongst all the forgettable desserts at Cocotte. Sadly or luckily, most desserts at Cocotte are as weak as Ember's. Otherwise, I will have switched camps!. Basque cake is however very comforting. It is supposed to come with a variety of fillings but so far we only encountered chocolate. Not that I am complaining for the chocolate filling complements the simplicity of this cake very well.
It is going to be a very long affair this time.
